Meatless Monday: 'Ghoulash'


Specially for Halloween week, a vegan version of goulash. Goulash is a Hungarian dish which originated in the Middle Ages. Traditionally made with beef, the name of the dish is derived from 'gulyas' which is the word for Hungarian herdsman.  


'Ghoulash'

You will need
Serves 2

1 tbsp rapeseed or olive oil
1 onion, peeled and chopped
2 cloves garlic, peeled and sliced
1 large stick celery
1 carton chopped tomatoes
Bay leaf
1 tsp sweet paprika
1 tsp pink salt or organic bouillon
2 large white potatoes, cut into chunks
1 tin organic black eye beans
Coconut cream to serve (optional)

Heat the oil and fry the onion and garlic until soft , about 3-5 minutes. Add the celery, chopped tomatoes, bay leaf, paprika, salt or bouillon, potatoes and 250ml water.  

Bring to the boil, then reduce the heat to simmer for 30 minutes until the potatoes are soft. Add more water if needed.

Stir in the black eye beans and heat through.  Remove bay leaf before serving.

Top with coconut cream if using. Serve with crusty bread if you wish to mop up the juices.
