Meatless Monday : Vegan no mayo coronation rice salad

We like a rice salad and often try new ways with them.  This vegan no mayo coronation rice salad is the result of our latest attempt.  It would make a good packed lunch or to make it a more substantial dish, you could add some chickpeas.  It also uses some of the coriander that we have been growing.
Vegan no mayo coronation rice salad
Serves 2
You will need
150g brown rice, rinsed
Olive oil spray
½ red onion, peeled and chopped
½ yellow pepper, diced
½ tsp salt
1 level tbsp mild curry powder
1 tbsp lime juice
6 tbsp peas
25g raisons
Coriander leaves
Flaked almonds

Cook the rice according to the manufacturer’s directions.  Add the peas for the last few minutes of cooking.

Meanwhile spray a small fry pan with olive oil spray. Add the onion to the pan together with the salt and cook for 3 minutes.  Add the pepper, curry powder and lime juice and continue to cook for a further couple of minutes until tender, adding a little water if necessary.  Add the raisons. 

When the rice is ready, drain really well then stir into the onion and pepper mixture.  Divide between two bowls and top with coriander leaves.
